I like to alter my recipes; however, the recipes don't like to be altered. Something has to give sometime.
My professor once said life would be easier if we just KISS, also known as Keep It Simple Stupid!
Yes, I was at it again - cookies. I am bound and determined to make cookies. I was trying to remember what Barb used in her cookies besides butter. Sour cream? Yogurt? Pudding? Applesauce? My conclusion - pudding. So I went digging through recipes and found a pudding cookie. How exciting!
Okay, so you have all been there.. started a recipe and than realize you don't have an ingredient. ADMIT IT… unless you all are some sort of planner and think to look ahead. For your information I am not a planner and guess what ingredient I didn't have… vanilla pudding. But I did have fat free, plain yogurt. That is the kind you should never buy, but I do because I feel it is good for me. I choke it down. Anyways, I decided to substitute the yogurt for the pudding.
Problem: I didn't know how to measure 3 oz.
Solution: Pretend I knew.
Problem: The recipe called for a powered mixture.
Solution: Convince myself that it would make it moister.
Problem: I didn't have baking powder.
Solution: Powder can be very similar to baking soda… both white.
Problem: Let's just say a dab turned into a glob, and the nice sticky dough was similar to a pond.
Solution: MORE FLOUR!
As of right now the dough is sitting in the fridge 'harding up'.
The results: a little flour tasting, but VERY moist :)
